Why loaf pans

Loaf pans have straight sides and a sliding lid. The lid traps steam and creates a fine, even crumb. The straight sides make square slices that fit neatly in a toaster or sandwich press. You can also leave the lid off for domed breads and cakes.

The lid also makes storage easy. Loaf pans stack flat and nest inside each other.
