Why loaf pans
Loaf pans have straight sides and a sliding lid. The lid traps steam and creates a fine, even crumb. The straight sides make square slices that fit neatly in a toaster or sandwich press. You can also leave the lid off for domed breads and cakes.
The lid also makes storage easy. Loaf pans stack flat and nest inside each other.

This is the bread baker's pan. The 13" length holds the same volume as a half sheet pan, about 208 cubic inches.
Sandwich loaves. Pain de mie. Long loaf cakes. Double batches of banana bread. With the lid on, you get square slices perfect for sandwiches. One loaf makes about 20-24 slices depending on thickness. Slice thin for tea sandwiches. Slice thick for French toast. The uniform shape means even toasting and consistent portions.
