Saigon cinnamon sticks from Slofoodgroup: whole quills of Vietnamese cinnamon, Cinnamomum loureiroi, grown in Vietnam and packed in the USA. Saigon cinnamon is a cassia-type cinnamon with a higher volatile oil content than Ceylon or Chinese cassia, which gives it a sharper, sweeter heat than the cinnamon most kitchens keep on hand.
Whole sticks hold their oils far longer than ground cinnamon. Drop one into mulled cider, chai, or rice pudding while it simmers, steep it in syrup or poaching liquid, or grate it fresh over French toast and cinnamon rolls. In savory cooking it goes into braised lamb, pho broth, and curries, and comes out before serving.
2 oz: a small supply for the spice drawer and holiday baking
8 oz: for regular bakers and batch drinks
16 oz: for heavy home use, cider season, and small food businesses
We stock this with our kitchen and baking goods because whole Saigon cinnamon carries through a long bake or a slow simmer where milder cinnamon fades, and whole sticks keep that flavor sealed in until you grind or steep them.
