The Shun Classic 8.25-inch Offset Bread Knife is built for slicing bread, cakes and pastries. Many bread knives use small, sharp teeth that saw and tear. This one has wide, low frequency serrations meant to glide, and Shun designed it to cut crusty and tender bread without ripping or squashing.
The handle is offset from the blade line. That lifts the hand above the cutting board, so the knuckles clear the board at the bottom of the stroke and you are not hovering over the edge to avoid them.
Blade: 8.25-inch serrated edge with wide, low frequency teeth, VG-MAX steel core, 68 layers of Damascus cladding, 16-degree edge
Handle: Black D-shaped Pakkawood, offset from the blade, comfortable for left and right-handed users
Origin: Handcrafted in Japan, from the Shun Classic line
We stock this because a bread knife with knuckle clearance fills a gap that a standard bread knife leaves. It sits beside the Shun Classic Blonde 7 Piece Block Set from the same Shun Classic family.
